Ingredients (Makes 8 Burritos)
- 32 oz 96% lean ground beef
- 400g 2% cottage cheese (pre-blended smooth)
- 120g 2% Mexican cheese
- 120g fat-free cheddar cheese
- 2 cans Hatch chopped green chiles
- 8 flour burrito tortillas
- Taco seasoning (to taste)
Instructions
- Brown the beef
In a large skillet, cook the ground beef over medium heat until almost fully cooked. - Add everything else
Lower the heat and add:- blended cottage cheese
- both cheeses
- green chiles
- taco seasoning
- Adjust moisture if needed
Depending on your cottage cheese, the mixture may be a little watery.
→ If so, let it cook down or lightly drain before assembling. - Warm the tortillas
Microwave tortillas for ~20 seconds to make them easier to roll. - Assemble burritos
Divide the mixture evenly across all tortillas and roll tightly. I even use a food scale to be precise (but that’s optional). - Wrap and store
Wrap each burrito in foil and freeze.
→ These will last 6+ months in the freezer.

Ideal Reheating Method (This is the game changer)
- Microwave for 2.5 minutes (flip halfway through)
- Air fry at 390°F for 3 minutes
