APPLE PIE FRENCH TOAST BAKE

This is a pretty versatile dish that I will try some other versions/flavors of soon. Honestly, it’s A LOT of food, but the fat content is great… allows for cookies and other treats later in the day. Not a bad option for breakfast which tends to be hard to get lean protein in.
INGREDIENTS:
French Toast Mixture:
4 Slices White Bread
200g Egg Whites
20g Vanilla Whey Protein
80g Unsweetened Coconut Milk
30g Sugar Free Maple Syrup
5g Cinnamon
1/2 Cup No Sugar Added Apple Sauce
1 Apple
1tsp Baking Powder
Splash of Vanilla Extract
Icing:
50g Nonfat Greek Yogurt
30g Sugar Free Maple Syrup
DIRECTIONS:
1) Preheat oven to 450F.
2) Tear bread slices up into mixing bowl, size is not that important (I swear).
3) Dump all other ingredients for the French Toast Mixture (minus apple) on top and mix together.
4) Chop apple roughly and add to mixture.
5) Spray oven-safe dish with non-stick and pour in mixture.
6) Bake at 450F for 20-25 minutes (22ish seems to work for my oven).
7) While it’s baking, combine two icing ingredients and set in fridge to thicken.
8) Once done, let the bake sit for 5 minutes to cool a bit before you add the icing.
