Ingredients (Makes 8 Burritos)

  • 32 oz 96% lean ground beef
  • 400g 2% cottage cheese (pre-blended smooth)
  • 120g 2% Mexican cheese
  • 120g fat-free cheddar cheese
  • 2 cans Hatch chopped green chiles
  • 8 flour burrito tortillas
  • Taco seasoning (to taste)

Instructions

  1. Brown the beef
    In a large skillet, cook the ground beef over medium heat until almost fully cooked.
  2. Add everything else
    Lower the heat and add:
    • blended cottage cheese
    • both cheeses
    • green chiles
    • taco seasoning
    Stir until everything is melted and fully combined.
  3. Adjust moisture if needed
    Depending on your cottage cheese, the mixture may be a little watery.
    → If so, let it cook down or lightly drain before assembling.
  4. Warm the tortillas
    Microwave tortillas for ~20 seconds to make them easier to roll.
  5. Assemble burritos
    Divide the mixture evenly across all tortillas and roll tightly. I even use a food scale to be precise (but that’s optional).
  6. Wrap and store
    Wrap each burrito in foil and freeze.
    → These will last 6+ months in the freezer.

Ideal Reheating Method (This is the game changer)

  1. Microwave for 2.5 minutes (flip halfway through)
  2. Air fry at 390°F for 3 minutes

This gives you:
